Ceviche of oysters w/ cucumber and dill
everyone loves oysters. everyone loves ceviche. let's try it together!!

Ingredients
1 cucumber, peeled
2 bird's-eye chillies, seeds removed
1 red onion, diced down to 2.5mm (1/8in)
juice of 3 limes
1 bunch of dill, chopped
1 dessertspoon of olive oil
salt and freshly ground black pepper
24 rock oysters
4 teaspoons creme fraiche
Method
Cut peeled cucumber in half lenthways and remove the seeds w/ a teaspoon. now cut the remaining flesh into a fine 2.5mm (1/8 in) dice and set aside. Chop seeded chillies finely and place them in a bowl. Add the cucumber and the diced onion and combine. Then add the juice of the limes, teh chopped dill and the olive oil. `season it w/ salt and pepper and set aside for 10 mins to macerate.
open oysters and divide between 4 plates. Spoon a heaped teaspoon of the cucumber mixture on to each oyster. Allow the oysters to sit for 10 mins before serving at room temperature.
To serve, top each oyster w/ a small blob of creme fraiche.
